Chicken Cordon Bleu

Ingredients
- 1 piece boneless skinless chicken breast
- 1 slice havarti cheese
- 1 slice regular or cooked ham
- 6 eggs
- 1/4 cup milk
- 1 cup seasoned bread crumbs
Preparation
- "Butterfly" (fillet) the breast. Season the inside with salt and pepper. Brush oil on top.
- Place 1 slice cheese and 1 slice ham into centre of breast. Roll up the breast and place toothpick through the end to hold it in place.
- Mix eggs and milk to make an "eggwash".
- Thoroughly coat the rolled breast with eggwash, then coat with bread crumbs.
- Place into roasting pan. Drizzle with olive oil. Coat base of pan with oil. Cover. Cook in oven at 400 f. For approx. 45 mins to 1 hour. Make sure centre of breast is fully cooked.
