Portuguese-Canadian Roast Beef

Ingredients:   

  • 1/4 L Tomato Paste
  • 1/4 L Ground Pepper
  • Salt to taste
  • 10 ml Olive Oil
  • 1 Large Onion
  • 4 to 10 Cloves of Garlic
  • 250 ml White Wine
  • 1 Beer
  • 1/2L of Water
  • 1 Chouriço (Portuguese Sausage)

    STEPS:

  1. Mix everything well in a blender (except chouriço and roast beef) and add to roast pan
  2. Make a cross-shaped cut on the Roast Beef and insert the frozen chouriço all the way across
  3. Roll Roast beef in the sauce inside the Roast Pan and insert in the oven pre-heated to 300-400 F
  4. After it is almost done take out of the oven and slice, then place back in the pan, cover with the sauce and put back in the oven for a few more minutes
  5. Serve with fries or mashed potatoes and steamed vegetables

 

The whole process should take roughly an hour and a half.
