Ingredients:
- Rack of Lamb (with about 4 or 5 ribs)
Olive Oil
Salt (to taste)
Pepper (to taste)
Mustard 1tbsp
Honey 1tbsp
Rosemary 1tbsp
Mashed Potatoes
Onion 1/2
Parsley 1/2 cup
Egg Yolks 3
Bread Crumbs 2 cups
Shallots 1tbsp
Garlic 1/2 tbsp
Red Wine 1/2 cup
Demi-Glaze 1/2 cup
Assorted vegetables (Snow Peas, Carrot, Red and Yellow peppers, etc.)
STEPS:
- Start by broiling the lamb, skin side down. After you have crossed grill marks turn over for a few seconds. Place the lamb skin-side up and start by applying a dollop of mustard and a dollop of honey, then mix as you rub both in. Sprinkle a pinch of rosemary and a pinch of salt and pepper.
- In a recipient that can go to the oven (such as an all metal frying pan) heat up some olive oil and place the lamb skin-side up for a few seconds before placing the pan in the oven for 10 to 15 minutes (will depend on how well done you want the meat).
- Potato Croquettes
Mix some finely chopped onion, parsley and a pinch of salt and pepper into the mashed potatoes, then form thick rolls with your hands. Roll in batter and bread crumbs, then fry in 375F oil.
- Sauce
Start with some olive oil in the pan then add shallots, garlic and a pinch of rosemary. Let it golden, but not burn, then add the red wine. Reduce for a few minutes then add the demi-glaze and a pinch of salt and pepper.
- Vegetables
First dip the vegetables briefly in hot water, then in a pan lined with a little olive oil add a pinch of salt and pepper and sauté for a few seconds.
- Ready to serve. |
