Cod fish cakes in the oven - Portuguese Version >>

Normally this mixture, with less milk and minus the cheese and paprika would be fried but we are going to bake it instead. The taste is magnificent, the texture is very pleasing and close to the original but without the oil.
Ingredients:
- 300 gr poached cod (cleaned of skin and bones)
- 500 gr poached potatoes
- 300 ml milk
- 4 eggs (divide egg whites from the yolks and place in separate bowls)
- 1 gr ground pepper
- 1 pinch of paprika
- 2 tbsp Parmegiano cheese, or to taste
- bunch of parsley (well chopped)
- 1 onion (coarsely chopped)
- 3 cloves garlic (coarsely chopped)
Steps:
- Preheat oven to 430 degrees F
- Mash the cod into little flakes with a fork and place in a large mixing bowl.
- Mash the potatoes with a fork in a separate bowl.
- Sauté the onion and garlic with olive oil and a dash of paprika.
- With a wooden spoon, pour into the large bowl: mashed potatoes, milk, egg yokes, onion and garlic. Mix all the ingredients together.
- Mix the egg whites with an electric beater or hand mixer. Pour the mixture into the large mixing bowl.
- Add the chopped parsley.
- Add salt and pepper to taste.
- Add parmegian cheese to taste.
- Using two soup spoons take pieces of this mixture with one spoon and roll into the other spoon consecutively until an oval shape is formed (or use your hand to shape an oval shape). Line up the cod cakes on a baking sheet lined with parchment paper.
- Bake for 10-15min or until golden brown on one side and turn over to bake the other sides until they too are golden brown.
