Coelho Frito à Portuguesa >>

Ingredients:
- 1/2 Rabbit cut into pieces (for 2 people – 1 rabbit for 4)
- 3 cloves of garlic
- 2 Bay Leaves
- Seeds of 2 hot peppers (malagueta peppers)
- 1/2 tsp Paprika
- 2 pinches of Salt, or to taste
- 1 tbsp hot sauce (azorean hot paste)
- 1/2 Cup of White wine
- 1 Cup of small whole mushrooms
STEPS:
- Pour all the ingredients over the rabbit in a bowl and mix well, then let marinate in the fridge overnight.
- In a frying pan with a little bit of oil start frying the pieces of rabbit and save the marinade for later. Turn the rabbit as needed (about 4 times) and fry for about 30 minutes until crisp. Towards the end add the marinade. Just before pulling the pan from the flame add whole mushrooms and let them cook for a little bit.
- It is ready to serve. The serving suggestion is with round fries.
