Almond Pudding

Ingredients:

  • Eggs 7
  • Sugar 500gr
  • Butter, melted, 250gr
  • Crushed Almonds 1 cup
  • Pudding pan coated in caramel

    STEPS:

  1. Add the whole eggs to the bowl followed by the sugar and mix well.
  2. Add the melted butter and mix in well.
  3. Add lemon juice and mix, then the almonds and keep mixing a little more.
  4. Pour into pudding pan and place in the oven in a pan with water @ 350F for about 1 hour and 15 mins.
  5. After it has cooled to room temperature you can plate it carefully. If you place it in the fridge to cool quicker you must be careful that the caramel doesn’t make it stick to the sides. Carefully run a knife along the edge to loosen the top slightly and then dip the pan in hot water for a short period of time just to melt the outer layer and ease the process while keeping the pudding firm.
