Malassadas (Portuguese) >>

Ingredients:
- Pre mix the yeast: ratio of 2 packets of baking powder for every 5 pounds of flour. Mix with warm water, 1 tsp of sugar and a pinch of flour.
- 1/3 – 1/2 packet of butter
- Lemon zest
- Sugar 1 cup
- Eggs 6
- Milk 1 cup
- Water 1 cup(warm)
- Flour 1 kg
STEPS:
- Mix the butter, lemon zest and sugar. Add 2 eggs and mix, and then keep adding the other 4 slowly and always mixing in between. Add the milk and warm water and mix.
Add the flour and the yeast (baking powder) and mix very well. If it is too tough add a couple of extra eggs.
Let sit for about 30 minutes then mix again. Let it sit covered. When the dough rises and fills the bowl it’s ready to fry.
- Start by greasing up the hands a little bit with butter, then take a bit of dough and stretch it with your hands into a saucer size and shape (about the size of an open hand). Proceed by dropping the disk-shaped dough slowly sideways into the hot oil to prevent splashing. When golden on one side flip to the other. When golden on both sides take out and let drip sideways to get all the oil out, then let it dry also sideways (arrange against the side of a bowl lined with absorbent paper, for instance) to drain any remaining oil.
- The final step is to sprinkle with some sugar and cinnamon.
