Ingredients:
- Green pumpkin
- 1/2 Loaf of Portuguese
- corn bread
- Butter 1/2 cup
- Sugar 200 gr
- Cinnamon from 1 to 3 tbsp, according to taste
STEPS:
- The pumpkin needs to be peeled, the seeds removed and the meat cut into about 1 inch cubes. The meat is then boiled with a little salt in the water. After it has drained and been puréed it’s ready to be used in the recipe.
- In a large bowl, add 4 whole eggs to the pumpkin followed by 2 cups of sugar. After mixing the first ingredients start adding flour little by little.
- When the dough reaches a bread dough consistency it is ready. Sometimes, depending on the type and size of the eggs and on the water content of the pumpkin one may need to add a bit of extra flour.
- Add 1 tsp of cinnamon followed by the dried fruits and nuts and mix them in.
- Grease the baking sheet, then take some flour in your hands, grab a piece of dough and roll it between your hands until it is a bit thicker in the middle and thinner at the ends so that when placed on the baking sheet it will become almond shaped.
- Place the baking sheet in the oven for about 45 minutes at 350 – 400F.
