Lombo de Porco Recheado >>

Ingredients:
- 2 pieces of Pork Loin
- 1 Chouriço
- 1 Apple
Shish kabobs:
- Egg Plant
- Onion
- Tomato
- Zucchini
- Green and Red Bell Peppers
Rub:
- Vegetable Oil
- Paprika
- Salt
- Pepper
- Garlic Powder
Stuffing:
- Portabello Mushrooms
- Olive Oil
- Pinch of Salt
Sauce:
- Red Wine
- Cognac
- Fresh Thyme
- Chopped Garlic
- Shallots
- Demi Glaze
STEPS:

Start by broiling the lightly oiled (olive oil) and salted mushrooms.

Cut the ends off the meat and carefully stick the knife in the center and along the length of the meat from both sides. Insert the mushroom stuffing about 3/4 of the way and then cut the chouriço in half and slice once again in half along the length. Use the chouriço to plug the pork loin from both sides with the mushrooms in between, cutting off any excess chouriço flush with the piece of meat.
- After making a rub with some vegetable oil, paprika, salt, pepper and garlic powder roll the stuffed pork loins in it and then broil them.
- Take an apple and cut it into thick slices, then put it on the broiler for a few minutes.
- Make a sauce with olive oil, finely chopped shallots, fresh thyme, chopped garlic, cognac, red wine and demi glaze.
- Create shish kabobs out of the Egg Plant, Onion, Tomato, Zucchini and Green and Red Bell Peppers. After brushing with a light coat of olive oil grill the shish kabobs for a few minutes.
- Serving suggestion: with mashed potatoes decorated with a tortilla shell. Drizzle the sauce only on the meat and not on the vegetables.
