Bolos de Arroz >>

Ingredients:
- Flour 4 cups
- Eggs 6
- Sugar 3 Cups
- Butter 250 gr.
- Milk 1 1/2 cups
- Baking Powder 1 tsp
- Lemon zest from 1 lemon or 1 instant lemon pudding
STEPS:
- No, there is no rice involved in these cakes. That is just what they have always been called.
- Separate the egg whites into a bowl and whip until firm.
- In another bowl mix the eg yolks with the sugar, then add half the melted butter, the lemon zest, and two cups of flour with the baking powder. Keep mixing everything and add the remaining butter and milk little by little. In the end add the remaining flour and the egg whites.
- In a baking sheet line the bottom with two sheets of parchment paper and line circular, bottomless forms with strips of parchment paper. Spoon the dough into the forms (about 1 spoon per form) and sprinkle with sugar.
- Place in a pre-heated oven at 350 F for 15 to 20 minutes.
