Madeira’s Black Cake

Ingredients:
- 1 egg
- 1 cup of sugar
- 2 tbsp molasses
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tbsp butter
- 1 cup of the following candied fruits: orange peel, cider and cherries, plus almonds with the peel on and walnuts
- 1 cup flour
STEPS:
- Mix the egg, sugar, baking soda, molasses, butter and cinnamon until a creamy, even consistency is reached.
- Add the candied fruit and nuts while mixing and then keep mixing while slowly adding the flour. At this time the mix will likely be too thick for an ordinary mixer so finish mixing by hand. Put it into a cake pan with the bottom lined with parchment paper that has been buttered and floured.
- Goen in the oven at 300 F for 15 minutes.
