Portuguese Fish Stew

OMNIAlthough this dish can be cooked for instance in a covered wok or other type of pan, it is meant
to be cooked in the Portuguese ‘cataplana’,which is a copper pot with two wok-shaped halves
that get locked together.

Ingredients:

  • Onion
  • Garlic
  • Green and red peppers
  • Tomato (cut into quarters)
  • Parsley
  • 1 Rock-Bass fillet
  • 2 Tiger Shrimp
  • 1 Salmon fillet
  • 1 Lobster tail
  • 2 Codfish fillets
  • Clams
  • 1 Frog-Fish fillet
  • Cilantro
  • Tomato sauce
  • Salt and pepper
  • 1 Potato (pre cooked)
  • Aromatic Herbs
  • Olive oil
  • White wine
  • Port wine

    STEPS:

  1. Cover the bottom of the cataplana with onions, garlic, and olive oil
  2. Add green and red peppers and tomato
  3. Arrange the fish in the cataplana and add more onions and garlic on top
  4. Add parsley, cilantro, tomato sauce, salt and pepper
  5. Cut one pre cooked potato into four and add to the ingredients already in the cataplana
  6. Add aromatic herbs and olive oil, white and port wines to the stew
  7. Finally, close the cataplana and put on the stove for 15 to 20 minutes
  • Ready to serve
