Ingredients:
- Olive oil
- 2 Tbsp minced Garlic
- 1/2 Onion sliced
- 1/2 Cup of Spinach
- 2 or 3 “Batatas a Murro”, which literally translates to “Punched Potatoes” *see recipe below
- Sliced tomato
- Cooked Black Beans
- Cod Fish that has been cooked and torn into little pieces with the bones removed
STEPS:
- Sauté onion in olive oil until golden, then add garlic
- After it has sautéed for another minute add spinach
- The mold should be round without top or bottom and lined with some parchment paper
- Line the bottom of the mold with the potatoes and add the sauté
- The next layer is composed of the tomato slices
- Follow the tomato with a layer of black beans and then cod
- Season with salt, pepper and garlic
- Top everything off with a layer of onion half slices and drizzle with some olive oil
- Cook in oven pre-heated to 400 degrees for about 15 minutes
- In the meantime heat up some garlic in olive oil and drizzle over the top when serving
- “Batatas a Murro” consist of medium or small potatoes that are seasoned with coarse salt and broiled in the oven until soft, then using a hand (wrapped in a dish cloth or in an oven mit) one strikes each potato to split the skin. Olive oil is heated with a few garlic cloves and the potatoes are added and fried until nice and golden (remove the garlic so it doesn’t burn). Then they’re allowed to cool down and drip excess oil on some paper towels.
- Alternatively, and more simply, after broiling the potatoes and hitting them to split the skin one can just pour the hot olive oil with garlic over top (some even suggest using whatever sauce goes with the food one is eating)
