Variations on Chicken soup

Ingredients:   

  • Bite sized fake or real crab meat
  • Grated cheese
  • Two strips of presunto/prosciutto shredded
  • Strips of grilled chicken seasoned to your taste.  
    In this case we used chicken marinated in yogurt
    then pan fried but grilled might be even better.

    STEPS:

  1. Get the gizzards and the hearts boiling first because they take longer.
  2. Then make the broth in a large pot:
    - Get water to boil
    - Get some chicken thighs or breasts with the skin, boil it for about 40-45 mins.
  3. Cut away the cartilage from the gizzards, and cut the arteries and then split the hearts down the middle.
  4. Once the broth is done you can strain it to get rid of any loose skin or flesh.
  5. Add the rice noodles to the broth and bring it to a boil again, for a few mins.
  6. Once the broth is done with the noodles you can add any toppings to your liking.
